RUSSIAN FUDGE FEST

I went to the Chocolate Boutique in Parnell with my husband in the weekend and bought a few pieces of Russian fudge. Boy oh boy… it was party central for the teeth. So much sweetness ought to be illegal!

I wanted to have a go at making some myself. I looked online and found a winning recipe from the owners of Port Royal Cafe in Balclutha. I had a go at making it and it was amazing. I took some to my friends Kimberly and Hannah the next day.

Russian fudge
675g sugar
½ cup milk
½ tin sweetened condensed milk
125g butter
1/8 tsp salt
1 Tbsp golden syrup

Put sugar and milk into a saucepan, mix, cover and bring to the boil slowly. Add condensed milk, butter, salt and golden syrup. Boil, stirring frequently for about 30 minutes. Cool, then beat until thick for 5 minutes with a kitchen whizz until it thickens. Pour into a sponge-roll tin. Cut when set.
